What does Gravimetric technology from the Victoria Arduino VA388 Black Eagle do? Simply put the gravimetric is a unique set of sensors and equations allowing you greater precision, and resulting in your bringing the best out of your coffee.
At the heart of the gravimetric technology is the espresso brew ratio; the relationship between the weight of the ground coffee used, and the amount of liquid that fills the cup. The technology in the Black Eagle coffee machine from Victoria Arduino allows you to not only extract the full compliment of flavours from your coffee, but consistently extract your coffee to the espresso brew ratio regardless of demand.
How does the Black Eagle consistently achieve the espresso brew ratio?
The VA388 does this using a system and process that measures the cup to ensure the right amount of coffee:
- The barista specifies the weight of coffee in the cup
- The gravimetric system in the VA388 weighs the cup and the volume of liquid
- The internal software of the coffee machine manages the brewing process, and the barista can see the principal parameters on the group head display.
There's nothing worse than coffee that has been tarnished by hot or low temperatures outside of the ideal. To counteract this baristas using the VA388 Black Eagle can specifically set the delivery temperature of each group through three different temperature factors: namely water infusion, steam, and the delivery group temperatures.

What is the difference with the Black Eagle Volumetric
The main difference is how the liquid is measured by the coffee machine. The volumetric Black Eagle version uses traditional flow meters with a timer that manage the amount of water that is passed through to the group head.
The gravimetric system measures the amount of liquid that fills the cup by weight, which means if you under- or overdose the coffee the same volume of liquid will still be present in the cup. The traditional model on the other hand would result in a greater or lesser volume of coffee as a result of these inaccuracies due to greater or lesser absorption by the grounds.
